Rice with Seafood
Ingredients
- 4 cups Iberia Rice cooked
- 2 large whole prawns
- 1 medium onion
- 2 Iberia Red Peppers
- 2 bay leaves
- 4 ounces Iberia White Wine
- 3 tbsp. Iberia Minced Garlic
- 1 pound seafood (shrimp, squid, oysters, cooked octopus, macha and clams)
- 2 large mussels with carapace
- 2 ounces dried shrimp tails
- ½ oz Annatto
- 1 spoon yellow pepper pasta
- 2 tsps. sweet paprika
- 1 cup fish or chicken stock
- 1 ají panca peruano (or another type of hot pepper or chili) (optional)
- ½ tbsp. oregano
- 3 tsps. Iberia Olive Oil
- salt to taste
Instructions
- 1. In a pan put the Iberia oil for frying, garlic, tomato or sweet peppers, onion, white wine, oregano, the yellow hot pepper, and shrimp tails.2. Sauté the ingredients, pour chicken broth and salt; add the squid, clams, shrimp, cooked octopus, prawns, cooked rice, add the achiote to give it color and let the rice dry before serving.3. You can add crab molars, lobster masses or any other type of crustaceans, without having to alter the rest of the ingredients.
