  • 11/2  Bowl Cookies Maria Cookies crumbled (approx. 20 cookies)
  • 1/4  Bowl Turbinado cane sugar
  • 1/2  teaspoonful cinnamon
  • Pinch of salt
  • tablespoons unsalted butter melted
  • For the cheese cake with no-bake lime
  • 180  g sour cream
  • 315 cream cheese room temperature
  • 126 g unsalted butter room temperature
  • 135 g Of avocado
  • teaspoons freshly grated Key West lime zest to taste
  • 5-7  tablespoons lime juice
  • 9-14  tablespoons Turbinado cane sugar


  • For the cookie baseFinely crush the Galletas Maria cookies in a food processor or place in a ziploc bag and crush with a rolling pin.Stir together Cookie Maria crumbs, Turbinado cane sugar, cinnamon, and salt in a large bowl. Add the melted butter and fluff with a fork.Place 12 standard paper cupcake wrappers in a cupcake pan and press mixture into bottom of pan. Refrigerate while you make the cheesecake.For the No Bake Key Lime CheesecakeAdd the sour cream to a medium bowl and beat with an electric mixer until whipped (about 2-3 minutes). Lay aside.Add the cream cheese and butter to a medium bowl and beat with an electric mixer until completely creamy. Add avocado and mix until fully combined. Add lime juice and turbinado cane sugar to taste.
