Turkey Tortilla Soup


  • 2 tablespoons. Organic extra virgin olive oil Iberia
  • 1 ½ cup chopped white or yellow onion
  • 1 bunch of finely chopped green onions
  • 1 bunch of coriander finely chopped
  • 2  jalapeno seeds removed diced, or not if you want the wild version
  • 2 tablespoons Iberia minced garlic
  • 1 tablespoon of paprika
  • ½ teaspoon of double cayenne pepper for the wild version
  • 1 teaspoon Iberian organic turbinado sugar
  • 6 Roma tomatoes, peeled and diced about 2 cups
  • 2 cups of turkey broth
  • 2 cups of tomato juice
  • 4 cups shredded cooked turkey Save $

  • Heat oil in a large pot, add onions, scallions, cilantro, jalapeños, minced garlic, paprika, cayenne pepper, oregano, sugar, salt and pepper.Mix well and cook over low heat for about 10 minutes.Add the diced tomatoes and cook for another 10 minutes.Add turkey broth, tomato juice and shredded turkey. Bring to a boil, reduce heat and simmer for 10 minutes.Add the lime juice and remove from heat.Serve garnished with grated cheese, tortilla chips, avocado, cilantro, spring onion and lime wedges.
