Mango Chicken Cheese Tortillas

  • 1 boneless and skinless chicken breast 8 ounces
  • 1 teaspoon Iberia adobo seasoning
  • 3/4 cup plain yogurt
  • 1-1/2 teaspoons grated lime zest
  • 2 tablespoons Iberia Lemon Juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon Pepper
  • 1 cup peeled chopped mango
  • 1/3 cup finely chopped red onion
  • 4 flour tortillas
  • 1/2 cup crumbled blue cheese
  • 2 tablespoons minced fresh cilantro

Sprinkle chicken with Iberia adobo seasoning. Add extra virgin olive oil on a pan to grill chicken over medium heat for 6-8 minutes on each side.In a small bowl, mix yogurt, lime zest, Iberia lemon juice, salt and pepper.Finely chop the chicken and move it to a small bowl. Add in mango and onion.Grill tortillas over medium heat for 2-3 minutes,Top with chicken mixture and blue cheese.Grill for additional 2-3 minutes or until bottoms of tortillas are lightly browned.Drizzle with yogurt mixture and sprinkle cilantro.Cut each tortilla into 4 wedges and serve.
