Citrus Coconut Rum Cooler

  • 4 oz Iberia Coconut Water
  • 2 oz dark or spiced rum
  • 1 oz Iberia Lemon Juice
  • 0.5 oz simple syrup (or honey)
  • Splash of soda water or ginger beer (optional)
  • Lime wedge and mint sprig (for garnish)
  • Ice

In a shaker or tall glass, combine:

    • Iberia Coconut Water
    • Dark or spiced rum
    • Iberia Lemon Juice
    • Simple syrup (or honey)

Shake or stir with ice until well mixed.

Pour over fresh ice in a lowball or tall glass.

Top with a splash of soda water or ginger beer (optional).

Garnish with a mint sprig and lime wedge.
