Citrus Coconut Rum Cooler

- 4 oz Iberia Coconut Water
- 2 oz dark or spiced rum
- 1 oz Iberia Lemon Juice
- 0.5 oz simple syrup (or honey)
- Splash of soda water or ginger beer (optional)
- Lime wedge and mint sprig (for garnish)
- Ice
In a shaker or tall glass, combine:
- Iberia Coconut Water
- Dark or spiced rum
- Iberia Lemon Juice
- Simple syrup (or honey)
Shake or stir with ice until well mixed.
Pour over fresh ice in a lowball or tall glass.
Top with a splash of soda water or ginger beer (optional).
Garnish with a mint sprig and lime wedge.
