Leftover Turkey Arepas
- 1 tbsp Iberia Organic Extra Virgin Olive Oil
- 2 tbsp Iberia Mayonnaise
- 1 tbsp Iberia Minced Garlic with EVOO
- 1 tbsp Iberia Onion Powder
- 1 tsp Iberia Total Seasoning
- 1 tbsp Iberia 100 Percent Lemon Juice
- 2 cups Doñarepa Precooked White Corn Flour
- 2½ cups warm water
- 1 tsp salt
- 2 cups shredded leftover turkey
- Fresh cilantro or parsley (optional, for garnish)

1. Combine warm water, salt, and Doñarepa flour in a bowl. Mix and knead lightly until smooth. Let rest.
2. Divide dough into 6 to 8 balls and flatten into discs.
3. Heat a skillet with Iberia Organic Extra Virgin Olive Oil and cook arepas for 4 to 5 minutes per side until golden.
4. In a bowl, mix turkey with Iberia Mayonnaise, Iberia Minced Garlic with EVOO, Iberia Onion Powder, Iberia Total Seasoning, and Iberia 100 Percent Lemon Juice. Adjust seasoning.
5. Slice arepas open and stuff with the turkey mixture. Garnish with fresh herbs.
