Spanish-Style Quinoa

- 2 tbsp. Iberia Vegetable Oil
- 1 cup Iberia Quinoa with Spanish Seasoning
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 chive stems
- ½ can Iberia Tomato Paste
- 2 ½ cups water
- 1 tsp. Iberia Adobo Powder
- ¼ tsp. ginger powder
- 1 cup Iberia Manzanilla Olives
1. Preheat a large saucepan over medium-high heat and add the vegetable oil.
2. Stir in the quinoa, garlic and the rest of the vegetable and let it cook for 7 minutes until the onion is tender, and the quinoa has lightly toasted, stir.
3. Add in the tomato sauce and water, followed by the ginger and adobo powder.
4. Boil the mix, reduce heat to medium-low, cover, and simmer for 25 minutes. Make sure the quinoa is tender, and the liquid is absorbed.
5. Stir occasionally.
